We offer quarter, half, and whole beef shares, all custom cut and wrapped to your specifications by Matt's Custom Meats in Longview, Washington.
Quarter Share
175-187.5 lbs hanging weight. Perfect for smaller households or first-time beef share buyers. Requires 5-7 cubic feet of freezer space.
Half Share
350-375 lbs hanging weight. Our most popular option for families stocking up. Requires 8-10 cubic feet of freezer space.
Whole Share
700-750 lbs hanging weight. Maximum value and variety for large families or shared purchases. Requires 16-20 cubic feet of freezer space.
Transparent Pricing Based on Actual Weight
We price our beef shares based on hanging weight—the weight after harvest but before cutting. This ensures fairness for both you and us, as you pay only for what you actually receive.
- Whole Share: $5.75 per lb (approximately $4,313 total for ~750 lbs hanging weight)
- Half Share: $5.85 per lb (approximately $2,194 total for ~375 lbs hanging weight)
- Quarter Share: $5.95 per lb (approximately $1,116 total for ~185-190 lbs hanging weight)
Processing fees are paid separately to Matt's Custom Meats: $1.10 per lb (based on hanging weight) plus a $50 mobile fee per quarter. For example, a quarter share would have approximately $259 in processing fees, a half share approximately $513, and a whole share approximately $1,025.
Your deposit secures your 2026 reservation. Final pricing is based on actual hanging weight at harvest, with the balance due immediately after processing.

1. Reserve Your Share
We'll begin taking reservations in February 2026 for our October/November 2026 harvest. Shares often sell out by June, so early reservation is recommended. Required deposits: $150 for quarter shares, $250 for half shares, $500 for whole shares.
2. Customize Your Cuts
Matt's Custom Meats will contact you directly to discuss exactly how you want your beef cut and packaged. You can customize steak thickness, roast sizes, choose steaks over roasts, select package sizes, and request specialty items like stew meat and soup bones. This flexibility ensures you get exactly what works for your family.
3. Pickup at Matt's Custom Meats
After approximately 3 weeks of processing, you'll pick up your beef at Matt's Custom Meats in Longview, WA—about 50 miles from Astoria. All meat is custom cut, vacuum-sealed, and frozen, ready to stock your freezer.

Following Larry's passing, Jeremy now leads the operation with his wife Kallie and their son Jameson—the fourth generation helping to steward this land.

What You Need to Know Before Ordering
Understanding Hanging Weight and Yield
Hanging weight is the weight of the beef after harvest but before cutting and trimming. When you receive your packaged meat, you'll get approximately 60-65% of the hanging weight after bones are removed and fat is trimmed away.
For example, a quarter share with 187.5 lbs hanging weight will yield approximately 112-122 lbs of packaged, freezer-ready beef.
Freezer Space Requirements
Make sure you have adequate freezer space before ordering:
- Quarter Share: 5-7 cubic feet
- Half Share: 8-10 cubic feet
- Whole Share: 16-20 cubic feet
Availability and Timing
We harvest only once per year in October/November. We're now taking reservations for Fall 2026. Our shares have historically sold out as early as April for November harvests, so early reservation is strongly encouraged.
